Egg Pancakes

This is a recipe from my Aunt Avis. She and my cousin love these. I decided to try them this morning. They were fun and yummy. The lemon is a key ingredient. These are more of a dessert, not filling, so make sure you have some substantial breakfast in addition to this. They are sort of like an elephant ear you might get from the fair. Very easy and fast to make! This would be a nice dish to make on a special morning with coffee of course!



Egg Pancakes



2 eggs


1/2 c. milk


1/2 c. flour


Dash nutmeg


Powdered sugar


Lemon (freshly squeezed)



Put 1/4 c. butter in 9” cast iron skillet. Put in 450 oven while mixing batter. Beat ingredients until smooth. Pour into hot skillet. Bake about 12 to 15 min. Remove from oven. Spinkle with powdered sugar and squeeze fresh lemon on it. (Lemon is key!)
